Lessons from Restaurateur Tiffani Packer on Family, Leadership, and Sustainable Growth

On this week’s episode of the Radical Hospitality Show, host Zeke Freeman sat down with Tiffani Packer, the owner and operator behind one of Colorado’s most thoughtful and quietly influential hospitality collectives. From Evergreen to Morrison, Tiffani and her husband Rand have built a family of concepts that feel intentional, rooted, and deeply human.

What makes their story powerful is not just the number of restaurants they’ve created. It is the mindset behind how they operate, lead, and grow without losing themselves or their family in the process.

The Power of Choosing Family First

Many restaurateurs talk about balance. Very few build systems around it.

From the beginning, Tiffani and Rand made one guiding commitment: Family first.

This principle shaped decisions that most operators would resist, including closing their first restaurant on Sundays, even when industry giants told them it made no financial sense. The goal was to protect their marriage, be present with their kids, and remind themselves that the business serves the family, not the other way around.

That boundary has become a cultural foundation inside their company. Their teams know they are empowered to choose family too. That energy shows up in how they serve guests, handle challenges, and stay with the company long term.

How to Build Teams That Run Without You

Most independent operators struggle to step back. Tiffani and Rand figured out how to scale without burning out.

Their approach is simple but rarely practiced:

• Meet with top leaders weekly
• Invest in a monthly all-leadership training
• Give autonomy with trust
• Celebrate enthusiasm as a core company value
• Let team members rise through concepts, not just roles

They lead a small executive team, and that team empowers dozens of people who then serve thousands of guests. It is a cascading model of ownership. People feel it when they walk into any of their restaurants.

Tiffani calls enthusiasm one of their most important performance principles. In a world where the restaurant industry has been stretched thin for years, genuine enthusiasm has become a differentiator.

Growing Restaurants While Raising Four Kids

It would be easy to assume the Packers built their success by grinding nonstop. Instead, they built it while raising four children and intentionally involving them in the business.

Their kids learned to cook, serve, manage, and even launch concepts. Kiki’s Health Café, one of their most beloved brands, was started by their daughter when she was fourteen. Today, each child contributes in a unique way, even as they pursue their own paths in yoga, medicine, entrepreneurship, and dance.

Tiffani shared one of the most grounding insights from her parenting journey. She remembers sitting overwhelmed in a room full of laundry, praying for clarity, and feeling one thought come clearly:

You will know these children as adults longer than you will know them as children.

It reshaped how she mothered, worked, and led going forward.

Why They Keep Creating New Concepts

Some restaurateurs build one concept and replicate it. The Packers build concepts that match the needs of the town, the building, and the moment.

A wood fired Italian steakhouse in Morrison.
A drive through coffee shop.
A fast casual cantina in Tampa.
A health café led by a teenager.

Each concept answers a different community need. Each one challenges them to grow again. And each one brings fresh energy to the team.

Tiffani admits it would be easier to cookie cut. But easier has never been the path. Creativity, challenge, and community impact are what keep them inspired.

What Radical Hospitality Means to Tiffani

Tiffani describes radical hospitality as creating an experience that feels elevated, memorable, and genuinely warm. It is not about flashy moments. It is about thoughtful details people may not see, but always feel.

Fresh printed menus each night.
Glassware that enhances the wine.
Lighting that softens the room.
Ingredients sourced with intention.

Whether it is a drive through coffee or a once a year fine dining celebration, the experience should feel personal and cared for.

Tiffani and Rand Packer remind us that great hospitality begins at home. It flows out of strong values, healthy boundaries, and the belief that people rise when trusted.

Their restaurants may look different on the outside, but the heartbeat is the same inside every one of them: care for the team, care for the guest, and protect the family that makes it all possible.

It is the kind of leadership our industry needs more of.
